  • Bring 4 quarts of water to a boil and add olive oil and salt to taste.

  • In a large pan, heat the unsalted butter and olive oil over medium heat.
  • To the pan, add the onions and garlic and cook the onions for 8 minutes, or until they are translucent.
  • Sauté the shrimp in the pan for 4 to 5 minutes, or until they are pink.
  • Take the shrimp out of the pan and set aside.
  • Add chopped tomatoes and cook for a few minutes, continue stirring.
  • Add white wine, salt, and black pepper to the pan and bring to a boil.
  • Reduce the heat to low and continue to cook, stirring occasionally until the sauce thickens.
  • Add shrimp, linguine, and a few tablespoons of pasta water to the pan and toss in the sauce.
