Recipe from Cousin Craig Schub
- 1 box Mezzi Rigatoni
- 1 Rigotta cheese
- 1/2 cup grated parmigiana cheese
- 1 jar tomato sauce
- 1 package sliced mushrooms
- 1 lb shredded pork (salmon or crab works if you don’t want meat)
Cook pork and mushrooms in pasta sauce at low simmer for 45 mins or longer. Cook pasta per instructions. Mix all ingredients in a baking dish. Bake at 350 for 40 minutes. Let rest for 10 minutes and mangia!
