Eggplant Pargmagiana

  • Eggplant
  • Beaten Egg WITH :MILK AND SALT
  • Bread Crumb (Plain Progresso) ( mixture: Add Fresh Parsley, Chopped Garlic, Grated Cheese, Salt)
  • Wesson¬∑oil
  • Plain tomato sauce (Marinara Sauce)
  • Mozzarella
  • Grated Cheese

Cut Eggplant into 1/2 inch slices. Dip them into the beaten egg, then into bread crumb mixture. Fry the pieces in Wesson oil. In a baking dish put a layer of sauce then a layer of the fried eggplant. Next spread mozzarella evenly and sprinkle some of the grated cheese. Repeat each layer (sauce, eggplant, mozzarella, grated cheese etc.) until all the ingredients are used.

Bake in oven at 3 SO degree for 1 hour
